Restaurant Introduction Food at the Galley's undergone a bit of a
shake-up lately. David Baird, a resident of Ardfern, has taken over the reins in the kitchen. With a career in successful restaurants in Edinburgh behind him, David is a firm advocate of fresh, local produce in season and has been wooing local farmers for years in attempts to inveigle the best produce. "It's been hell, but someone's had to do it" he says with a grin.

The menu is not big, but it grabs your attention. It's probably best to describe it as "modern Scottish" but based on tradition with a bit of country pub thrown in. You might have potted prawn and salmon for a starter, or sweet and nutty scallops - no messing - just with butter and cooked to succulence. Mains will include lobsters, "hairst bree" (harvest broth - a neck of lamb and vegetable stew). However, the main thing people travel for is the beef.

In recognition of the fact that the Galley was once a Drovers' Inn, which existed to water cattle on their way from Mull and Jura to the trysts at Falkirk and the South, beef is our specialty. David has been working closely with Barbreck farm to finish, hang and butcher the meat exactly the way he wants it. His steaks are among the finest in Scotland - sometimes topped with a bit of bone marrow, or perhaps finished with a port reduction. No matter - diners are well satisfied.

Puds are home-made and gooey. Cheeses are sourced from all over Scotland and represent the finest of her larder, including Anster, Criffel and Cromarty. Vegetarians get a better deal than the ubiquitous risotto, as we have a local organic vegetable producer (Ardfern Organics), inspiring kale and Dunsyre parcels, for example. We even have our own poly-tunnel where we grow our own herbs, salad leaves, tomatoes and strawberries!

You may just have to send out an advance party to see if all this is true. Just don't expect them back on time!
